Easy Breakfast: Poached Eggs, Avocado and Salmon

Just wanted to share this easy, quick and healthy Sunday brekkie that I whipped up this morning. And I do mean Sunday brekkie - eat all this salmon before work and your colleagues might not be so impressed.

All you need is...

2 thick slices of multigrain bread
2 free-range eggs
1 single-serve tin of skinned and de-boned salmon
A few scoops of fresh avocado
Olive oil spread for your toast
